WFPB Pumpkin Chocolate Chip Cookies


WFPB 
PUMPKIN CHOCOLATE CHIP COOKIES

Preheat oven to 350*

In a bowl combine and mix dry ingredients:

2 c. Whole Wheat Pastry Flour
1 c. Sucanat, Date Sugar, or Coconut Sugar
1 t. Baking Powder
1 t. Baking Soda
1 t. Sea Salt
1 T. Ground Flax
1 1/4 t. Cinnamon

In another bowl combine and mix wet ingredients well:

1/2 of a 15 oz. Can of Organic Pumpkin
1/2 c. Organic Apple Sauce
2 T. Organic Almond or Peanut Butter
1 T. Vanilla
1/4 c. Maple Syrup

Add to dry ingredients then mix in:

2 cups (or less)Vegan Chocolate Chips


Scoop onto cookie sheet lined with either parchment paper or silicone baking liners.
Bake until edges turn slightly golden. Watch them. I baked mine for 16 minutes at high altitude.

Cream of Rice

Creamy, comforting, warm cereal or dessert! (That's how I like to eat it! :) )

CREAM OF RICE

Boil approx. 8 c. Water. 
Depending on how thin or thick you prefer it. (You'll figure it out!) ;) 


Blend 3 c. Organic Brown Rice 
into smooth flour.



Turn off heat then slowly and carefully add flour little by little but quickly and stirring rapidly as you do. Mix well until thoroughly incorporated. 


Add Raw sweetener to taste. I used about 3/4 c. Raw Honey 

Approx. 1 T. Cinnamon 


So yummerly!!!

Raw Vegan Sour Cream



For Valentine's Day I wanted to make baked potatoes with "sour cream" and green onions. I have been eating a mostly raw vegan diet for 7 years now and I can't believe I have never made this before. It was amazing! I truly thought I was eating sour cream. It's SO simple to make. 

SOUR CREAM 

In a high speed blender add: 

2 c. Raw Cashews
Juice of 2 or more limes
1 t. Sea Salt 
Pure water for desired thickness 

Blend until smooooooth.

Dalop onto whatever you would use sour cream for. 

Happy savoring!!

P.S. Remember that nuts and seeds are high in F A T. Use them sparingly. No more than a HANDFUL a day and if you need to lose weight, avoid them.

Spicy (Or not) Tomato, Bean, & Corn Salsa


This stuff is SO GOOD you will want to use it to top everything!! Like salads, lettuce wraps, baked potatoes, and any and all Mexican dishes! It has a spicy kick so if you don't like that just leave it out or tone it down.  You will LOVE this recipe and make it forever! I promise!

I don't eat tortilla chips because they are fried or baked in OIL and OIL is NO BUENO for our bodies so I use these instead! 

You just toast them on a stove top griddle to make them soft or hard. And you can cut them into tortilla chips before hand as well. They are SO GOOD and you won't miss the oil At. All.


I adapted this recipe a little bit from my friend Susan B.

For the SAUCE mix together:

1 t. Chili Powder...or less...or not at all
1/2 t. Onion Powder
1/2 t. Sea Salt
2 t. Sweetener (Raw Honey, Raw Date Sugar, Raw Cane Sugar, Dates etc.) 
2 Garlic Cloves (minced)
2 T. Organic Ketchup
2 T. Sirachi or other Hot Sauce or...not
4 T. Red Wine Vinegar (or other vinegar)


SALSA

Big handful or 1/2 a bunch of Organic Cilantro (chopped)
Approx. 6 medium tomatoes or as many cherry tomatoes or other tomato as you wish!
1 bunch of Organic Green Onions 
1 can of Organic Black Beans (rinsed and drained)
1 can or Organic Garbanzo Beans (rinsed and drained) 
2 c. Fresh or Frozen Organic Corn 

Mix well. Let chill for a bit or...if you're like me...that never happens! LOL :)

MOCK TUNA &  RAW VEGAN MAYO

Before I went vegan I LOOOOOOVED me some tuna!! Solid white Chicken of the Sea with TONS of mayo! Yeah..well then I realized that "fish are friends NOT food" & I really didn't want the mercury that comes along with eating animals from the sea so... Wait till you try THIS recipe!!



RAW VEGAN MAYO

In a blender add:
2 cups raw cashews
Juice of 1/2 - 1 lemon
1/2 c. Pure water
1/2-1 t. Sea salt
3 T. Raw Honey
1 t. Mustard Powder
1/4 c. Apple Cider Vinegar

Blend until smooth


MOCK TUNA

In a food processor process:

2 15 oz. cans or fresh cooked organic garbanzo beans until tuna like consistency.
Transfer to bowl.


Add:
1/2 chopped onion
3 chopped celery stalks
2 T. Organic sweet relish
1 t. Organic Dulse
Raw Vegan Mayo to liking 




Mix well. Chill.


I made these little gems today but I love them even more with fresh organic tomato and romaine lettuce. Yum!!



They were  a HUGE hit at a vegan pot luck I went to today! It's reaaaaally yummy and hits the spot when you're craving some S.A.D. comfort food that doesn't contribute to poisoning our bodies, harming our seas or killing our friends.

Low Fat Vegan Pizza!!!

Hey Internet world!!!!! 
HAPPY NEW YEAR!!!!!
Long time no see!!!

I know....I can hear you say it...
I haven't been blogging a lot lately...
Well, it's because....
I'm going to COLLEGE!!!!
Yeah. 

BUT...

I HAVE to share my PIZZA recipe because everybody who tries it wants the recipe because it's like totally awesome!! :) :) :) 



First preheat your oven to 500*

Then make your "cheeze" topping.
I used to make it with tons of E.V.O.O. But NOT anymore!!! Mwuah ha ha ha!!

Put one block of organic non gmo extra firm tofu in your processor. 
Add:
Oregano
Basil
Parsley
Thyme
Paprika 
Fresh Garlic
Pinch of nutmeg
1/4 c. Nutritional Yeast
1/4 c. Water
 Optional:
Sea salt
Pepper
Red Pepper Flakes 

Process until smooth.

This "cheeze" is like a ricotta. I use it in any recipe that calls for it like lasagna, stuffed shells, or baked ziti.

On a cookie sheet covered with a Silpat nonstick baking mat (which I use for baking all kinds of things like fries since I no use yucky oil..) 



top your Ezekiel Pita Pockets with whatever favorite veggies you like! The skie's the limit on pizza creations! Oh..you should try a Greek hummus pizza or thai...all can be made vegan and oil free! Isn't that wonderful!? :D :D :D



Today because I looove BarBQ I used:



Organicville Original BBQ Sauce
Cilantro
Peppers
Tomatoes
Onion
Olives
&
Zucchini 

I like to use:

Bionaturae Organic Strained Tomatos
For a traditional pizza. 

Top:


Bake for 7 minutes and if you like your toppings a little more toasty immediately change oven setting to broil for another 3 minutes.

Raw Cranberry Sauce

I have always LOVED Cranberry Sauce with my mashed potatoes and fixin's at Thanksgiving. In fact I am pretty sure that it's actually my favorite part of the Thanksgiving feast! I had to have some with every bite. Well, who says you can only have it for dinner...this version is actually what I've been having for breakfast ever since I've been able to find organic cranberries at the grocery store! 

CRANBERRY DELIGHT SAUCE 
1/2 pineapple
10 Dates, pitted 
8 oz. Organic Cranberries 

Optional additions:
1 orange
1 apple


Combine in food processor


Enjoy! 


So so good! You'll NEVER want to eat that canned stuff again!

Raw Vegan THAI SALAD Dressing


                      Thai "Peanut" Dressing

  • 1/4 cup Raw Tahini
  • 2 tablespoons unseasoned rice vinegar or Braggs Apple Cider Vinegar
  • 2 tablespoons fresh lime juice, from one lime
  • 1/2 c. Pure water 
  • 1 tablespoon Nama Shoyu 
  • 2 tablespoons raw honey
  • 3 Medjool Dates 
  • 1 large garlic clove
  • 1-inch square piece fresh ginger
  • 1 teaspoon sea salt
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons fresh cilantro leaves

Vegan Split Pea Soup

This is my families FAVORITE soup of mine! 


SPLIT PEA SOUP
Ingredients:

12-16 cups of water depending on desired thickness
2 c. Dry Split Peas, rinsed
1 Organic Onion, chopped
2-4 Cloves, minced or garlic pressed
2-3 stalks of Organic Celery, chopped
2-4 Organic Potatoes, cut into bite size pieces
6-7 Organic Carrots or about 4 c. Organic Baby Carrots
1 t. (Per cup of water) of Gayelord Hauser's Vegetable Broth
1 t. Sea Salt
2 Bay Leaves
Black Pepper (add when ready to eat)

Combine all ingredients into a Pressure Cooker.
Bring to boil on HIGH.
Cover then wait until the pressure cooker "pshhhh's" then turn down to LOW.
Set timer for 25 minutes.

When done cooking, remove from heat and let pressure release on its own for an hour or so.
Then uncover, add pepper & serve.

Raw Vegan Key Lime Pie


Ok so...WHO doesn't like KEY LIME PIE???? But who doesn't want to DIE because of eating some??? Yeah...so...
Here's a recipe that will make you think you HAVE died and gone to 
"It's actually healthy for me Heaven!!" Hehe..


Pie Filling
In a good blender add:

4 LARGE or 5 medium RIPE avocados
Zest of 8 limes (do first)
1 c. Fresh Squeezed Lime Juice (use limes you zested.)
1 1/2 - 2 c. Raw Honey (add to taste)
1 T. Vanilla
1 t. Sea salt

Blend until completely smooth and creamy.



CRUST

In a food processor add:

3 c. Raw Organic Almonds
10 Large Medjool Dates
1 t. Sea Salt
1 T. Vanilla 

Blend.

Press into a pie dish.  


Add filling.
Cover.
Freeze.

I like to put mine into a plastic cake carrier to freeze. 

Wait until it's firm enough to slice.
If it's frozen solid use a warm knife to slice & then let thaw out a smidge before eating (if you can wait that long..Popsicle pie slices are awesome too!) 


If you don't LOVE this something's wrong with you... J/K! ;) No seriously...

Raw Vegan Broccoli Salad & "MayNo"


This is a Summer favorite party salad!
Learning how to make a raw vegan mayo is essential because it is an ingredient that is often used in recipes and you can use it to adapt your old time favorites, raw vegan style! :D


I like to call it: 

                                  MAYNO
In a good blender add:

1 c Raw Cashews
1/4 c. Pure Water
1/4 c. Fresh squeezed Lemon juice
3 T. Raw Honeyor 4-5 Medjool Dates or Raw Agave (not best option) :/
2 T. Raw Apple Cider Vinegar
1/2 t. Sea Salt
1/4 t. Ground Mustard 


Salad Dressing:

In a good blender add:

1 "MayNo" recipe
3 T. Raw Apple Cider Vinegar
2 T. Raw Honey or 4 Medjool Dates or Raw Agave 

Salad:

As much as you want of:

Organic Broccoli
Organic Red Grapes
Organic Celery
Organic Red Onion
Organic Raisins
Organic Raw Sunflower Seeds

Berries & Kreme

This recipe is BERRY good! Hahaha!
Ok...I know....
Anyway....
It's Fathers Day and I didn't have a lot of time to make something in advance so I just whipped this up in like 10 minutes!

Berries & Kreme

Use any berries you want!
Or any fruits for that matter!

I used all organic:
Strawberries
Blackberries 
Blueberries
Raspberries

Kreme:
2 c. Raw Cashews
2 oranges, juiced
1/4- 1/2 c raw honey 
1 T. Vanilla
1/2 t. Sea salt

Blend well until creamy.
Pour over berries and refrigerate until ready to eat.

This stuff reminds me of sweetened condensed milk that I used to eat by the spoonful straight from the can and poured over bananas! 

For sure add bananas when you are going to eat this salad. You can't put
them in until you are ready to eat them because they will turn yucky and brown.
Just make sure to add them! You'll understand what I mean...

Oh so good!

Vegan French Toast

Hi Everyone!

On Sundays we have a tradition of eating a typical breakfast meal after church for lunch or dinner depending on our church block. If it's 9:00-12:00 or 11:00-2:00 then for lunch and it it's 1:00-4:00 then for dinner.
Today the kids asked for French Toast.

The original recipe came from the Fit For Life Cookbook. I have adapted it through the years.

VEGAN FRENCH TOAST 

Preheat a non stick griddle on medium heat.

In a good blender blend 1 c. raw almonds into flour

Then add:

3 c. Non dairy milk. Organic non gmo Soy Milk is great!
1 T. Cinnamon
1-2 t. Vanilla
3 T. Ground Flax Meal

Blend well.

1 loaf of a good organic whole wheat bread 
(with no more than like 5 ingredients) or Sprouted Organic Ezekiel Bread. Frozen bread works really good!

Pour mixture onto a plate and dip each piece of bread until well coated then 
Place on griddle. About 3 minutes per side.

Top with desired fruit (bananas & strawberries are our favorites) and Real Grade B Organic Maple Syrup.



Your kids will absolutely LOVE these!

Raw Vegan Thai Basil Salad

Hey guys! 

I'm on Day 18 of #100DaysofRAW and going STRONG!! I can't believe how much my fitness has improved!! I ran a PB today! 5.2 miles! AND..I could have kept going if I didn't have to get home! 
Raw food POWER!!


My Honey has been 100% raw now for almost a whole month! He is feeling so much better and I bet he is setting record speed for healing from pneumonia! 
Raw food POWER!!!

So as you know, since my dear Hubby has been raw I have been creating masterpieces for dinner each night! And I've forgotten to blog some of them...so don't be mad! I'll get to it! 😃 

Tonight I'm making a Thai Basil Salad!
(Actually I threw a bunch of veggies together and the DRESSING is the Super Star!)

Let's see...

THE SALAD 

Organic Romaine
Organic Red Cabbage
Organic Carrots
Organic Cucumber
(Ok, everything is organic!)
Organic Red Bell Pepper
Organic Tomatoes 
Organic Green Onions 
Organic Cilantro
Organic Broccoli
Organic Cauliflower

THE DRESSING 

In a blender add:

1 c. Sour Kreme (optional) 
(see recipe below) 
1/2 c. Nama Shoyu (raw soy sauce)
6 Medjool Dates, pitted
1/2 inch piece of Organic Ginger
Juice of 2 limes
1 c. Lemon or Thai Basil


SOUR KREME 

In a blender add:

1 1/4 c. Raw Cashews
1 c. Pure Water
Juice from 1 Lemon
1/2 - 1t. Sea Salt
Garlic clove (optional)

Makes 2 cups

This salad hits the 
"I'm craving something  savory spot"!
