Raw Vegan Sour Cream



For Valentine's Day I wanted to make baked potatoes with "sour cream" and green onions. I have been eating a mostly raw vegan diet for 7 years now and I can't believe I have never made this before. It was amazing! I truly thought I was eating sour cream. It's SO simple to make. 

SOUR CREAM 

In a high speed blender add: 

2 c. Raw Cashews
Juice of 2 or more limes
1 t. Sea Salt 
Pure water for desired thickness 

Blend until smooooooth.

Dalop onto whatever you would use sour cream for. 

Happy savoring!!

P.S. Remember that nuts and seeds are high in F A T. Use them sparingly. No more than a HANDFUL a day and if you need to lose weight, avoid them.

Oil Free Whole Wheat Tortillas


Dilemma: You just want to eat a burrito but you don't want to eat oil. 

Rant: It is SO difficult to eat out and find something other than salads without dressing, steamed veggies, rice and baked potatoes. Don't get me wrong...I'm grateful for at least those items. But sometimes you just want a veggie burrito am I right!? Come on world! Hurry up and catch up with the science of the times! Oil is NOT HEALTHY for our bodies. 

Alright I'll stop and just give you the fab recipe for these rad tortillas. :)

WHOLE WHEAT TORTILLAS 

6 c. Whole Wheat Flour 
6 T. Ground Flax
1 t. Sea Salt
3 c. Pure Water

Mix and roll into golf sized balls. 

With rolling pin roll into very thin tortilla. 

Place on hot non stick griddle and cook for 30 seconds or so on both sides.

Fill with yumminess!

Brazil Nut Milk

Brazil Nut Milk is SO delicious!!! It's my favorite nut milk. 

BRAZIL NUT MILK

Step 1: Soak 1 c. Raw Brazil Nuts overnight

Step 2: Rinse

Step 3: Blend nuts in high speed blender with 5 c. Pure Filtered Water

Step 4: Strain pulp through Nut Milk Bag or panty hose into bowl

Step 5: Add strained milk back to blender 

Step 6: Add a pinch of sea salt

Step 7: 1 t. Vanilla

Step 8: 1/4 c. Raw sweetener like Agave/Honey/Stevia/Date Sugar/Coconut Sugar/Date Water/ Dates/ Stevia Herb/ Cane Sugar 

Pour over a bowl of fresh sliced ripe fruits, berries, raisins and dates.

UN-FRIES

I know I always say at the beginning each of each recipe I share how much I LOVE that recipe but it is always true! I REALLY do!! ;) Ok so FRIES. How delicious are fries!!? But then I learned how unhealthy frying is and so I learned how to bake them. Then I learned how unhealthy eating ALL oils are and gave up on ever eating fries again. But...

One day my friend Emily came over to a pot luck we had and brought these babies! 

You guys you are gonna come to my house and hug me after you make these!!! :) 

UNFRIES

Preheat oven to 400*

Slice organic potatoes into thick cut fries.

Put into a bowl.

Season with any of your favorite herbs and spices like:

Garlic
Onion
Sea salt
Pepper
Smoked paprika
Poultry seasoning
Cajun season 
Mediterranean seasoning
Adobo 

Mix and coat well. 



Place evenly but separately onto a cookie sheet lined with a  Silpat or other stick proof liner.


Bake for 40 minutes until desired perfectness. 


Watch your family dig in!


Oh yeah!!! 

Make sure you are there when these get pulled out of the oven because they will disappear in minutes!!

Buy a lot of potatoes because I can guarantee you will make them every night  for a least a week. :)

Spicy (Or not) Tomato, Bean, & Corn Salsa


This stuff is SO GOOD you will want to use it to top everything!! Like salads, lettuce wraps, baked potatoes, and any and all Mexican dishes! It has a spicy kick so if you don't like that just leave it out or tone it down.  You will LOVE this recipe and make it forever! I promise!

I don't eat tortilla chips because they are fried or baked in OIL and OIL is NO BUENO for our bodies so I use these instead! 

You just toast them on a stove top griddle to make them soft or hard. And you can cut them into tortilla chips before hand as well. They are SO GOOD and you won't miss the oil At. All.


I adapted this recipe a little bit from my friend Susan B.

For the SAUCE mix together:

1 t. Chili Powder...or less...or not at all
1/2 t. Onion Powder
1/2 t. Sea Salt
2 t. Sweetener (Raw Honey, Raw Date Sugar, Raw Cane Sugar, Dates etc.) 
2 Garlic Cloves (minced)
2 T. Organic Ketchup
2 T. Sirachi or other Hot Sauce or...not
4 T. Red Wine Vinegar (or other vinegar)


SALSA

Big handful or 1/2 a bunch of Organic Cilantro (chopped)
Approx. 6 medium tomatoes or as many cherry tomatoes or other tomato as you wish!
1 bunch of Organic Green Onions 
1 can of Organic Black Beans (rinsed and drained)
1 can or Organic Garbanzo Beans (rinsed and drained) 
2 c. Fresh or Frozen Organic Corn 

Mix well. Let chill for a bit or...if you're like me...that never happens! LOL :)
