My father is Ukranian and one of my FAVORITE dishes my Babushka used to make was Borscht!
There are MANY ways to prepare it.
It can be eaten hot or cold. I prefer HOT!
I have adapted my family recipe
a bit and it is SO delicious!!
BORCHT
In a big pot add:
3 quarts of filtered pure water
1 Organic Onion, chopped
3-4 cloves of Organic Garlic
2 Organic Celery, diced
5 Organic Carrots, diced
4 small Organic Potatoes, quartered then diced
1 small Organic Cabbage, chopped
1 Organic Green Pepper, diced
1 large Organic Beet, julienned
4 T. Gayelord Hauser's Vegetable Broth
1 T. Sea salt
Pepper
2 Bay Leaves
Then add:
1 small bottle Organic Ketchup (or a small can of organic tomato paste or sauce & an added sweetener like raw honey.)
1 can low sodium Kidney Beans, drained & rinsed
2 T. Dill
Enjoy with a BIG Salad & some traditional Rye Bread!
When I eat this I am transported to my Babushka's house...
